7 Recipes To Whip Up On A Lazy Weekend

Many of us love weekends. Finally, we have some time to experiment with food ideas that have been brewing during the week.

But what should be first on your list to whip up? Check out these ideas:

Mac ‘n’ Cheese Taco Style

Mac ‘n’ cheese is a weekend favorite. It’s something that we all know how to cook in an emergency. But if you want to take it to the next level, turn it into a taco. Or, more specifically, just add Mexican toppings. Mincemeat, sour cream, jalapenos, and chopped tomatoes all taste great.

We all know that sweet potatoes are extraordinarily good for us, but we don’t eat enough of them. The good news is that you can whip up a meal based on one of these in a matter of minutes.

Start by baking the sweet potato in the oven at a high temperature until you see sticky, sugary material oozing through the skin. Then open it up and add refried beans, guacamole, and green onions. Delicious.

Chicken Cassoulet

Are you looking for a hearty meal to get you in the mood for fall? If so, try this chicken cassoulet recipe. It’s decidedly French and uses chicken, sausage, bacon, and cannellini beans for added authenticity.

Mexican Corn Dip

Have you ever been to a diner or a dive where they serve corn dip? The stuff is delicious and is one of the most interesting condiments out there. To make it, you take some canned corn and mix it with Cotija cheese, species, lime juice, and mayo and leave it to marinate. What you end up with is something that works as a dip for tortilla chips or a topping for hamburgers and hot dogs, fresh from the BBQ.

Salmon Salad

This recipe is a bit like a class tuna Nicoise salad, but using salmon instead.

Grab a can of salmon and then spoon out the fish into a mixing bowl. Then add whatever salad bits you want to include with it, plus a dollop of Greek yogurt. The result is a thick, crunchy dish with plenty of protein to see you through the afternoon.

White Beans On Toast

White beans on toast is an upmarket version of the British classic. Here you’re taking slices of crusty white bread, toasting them, and then topping with marinated beans.

You’ll need to prepare this one a bit in advance. Grab a can of cannellini beans and put it in a bowl. Then add some red wine vinegar, olive oil, and lemon (plus any herbs you want to include). Leave it in the refrigerator overnight for the flavors to infuse and then warm it up slightly as you toast the bread. The result is a memorable, somewhat Italian dish you can whip up in a few minutes.

Finally, if you want something to take with you, you could make a hummus salad sandwich. Combine the hummus ingredients in a food processor and then spread generously on two slices of bread, placing any other fresh salad you want in the middle. It’s quick and easy health food.
