My Favorite Nutritious Foods For Toddlers

I talk a lot about health and nutrition for women, but today, I want to talk about my favorite nutritious foods for toddlers. We love burgers and fries just like anyone else. It’s called balance, right? Feeding our littles healthy and nutritious food is really important to my husband and I. We want them to know what foods help them stay strong  and healthy, so that when they grow up, they will hopefully continue to make healthy decisions.

Baby M is 8 months old and we are doing baby led weaning with her. (If you want a BLW calendar printable to keep up with what foods you present to your baby, sign up for my free printables library here.) Her favorites so far have been avocado, broccoli, rotisserie chicken and blueberries.

We also did BLW with the twins and they would eat the coolest things like mushrooms, turkey meatballs, roasted sweet potatoes, and banana/egg pancakes. At 3, they still love a lot of healthy foods, but of course they love pizza and ice cream too. (Balance, remember?)

This is such a versatile food. It’s one of those healthy foods that you can sneak into so many other things. I throw it into smoothies and shakes for myself and the kids. My friends over at, shared an awesome recipe for spinach balls (and other hearty and healthy recipes for toddlers). It’s a must try for your littles!

Sweet Potatoes

Sweet potatoes are a staple in our house. I make sweet potato fries that never look Pinterest worthy, but are always delicious. I also love to roast sweet potatoes with coconut oil and paprika. Recently, I made a sweet potato and apple hash that is amazing. Just chop up sweet potatoes and apples (I use granny smith), saute until soft with coconut oil and cinnamon. Top with feta. Thank me later!

Greek Yogurt

The only yogurt I buy is Greek yogurt. I will get the plain and add fruit to it for the girls. Before age 2, it should be full fat Greek yogurt. It’s not uncommon to find one of the girls sneaking the Greek yogurt from the fridge because they love it so much.

Banana Pancakes

This recipe is such a hit with the kiddos! They will eat them warm. They will eat them cold. They will eat them in the house. They will eat them with..well you get the picture.

Strawberry Sorbet

On those days, the girls ask for ice cream and I don’t want them to have it, I make strawberry sorbet. It’s so stinkin’ easy. Simply throw frozen strawberries in the blender with a little honey or pure maple syrup and boom, sorbet.

My Thoughts

I was also under the impression that self care meant spa visits or mani/pedis. Those things are great, but self care is so much more than that. It’s a warm bath or a quiet cup of coffee before the kids wake up. It can be reading a great book or watching your favorite comedy. The possibilities are endless.

I Finally Got a Pressure Cooker and This Is What Happened

I got a pressure cooker and this is what happened

When I moved in with my husband six years ago, we didn’t have a stove. In fact, we didn’t have a stove for a year. Yes. A YEAR!

What did I do?

I used my Crockpot religiously. I was obsessed with it. So much so, that when we finally got a stove, I stood and looked at it like it was so unidentified object that I have never seen before. Obviously, I began using it, but the Crockpot was and has been my go to.

Until now.

I recently got a pressure cooker and let me just say: GAME CHANGER.

Cook an entire meal in 20 minutes? You have my attention.

My first meal was a Hawaiian Chicken dinner that I found on Pinterest. Check it out here. Instead of making it a sheet pan recipe, I put it all in the pressure cooker minus the rice.

So delicious! Since it was my first time using it, it took me a bit longer to cook because I was learning, but still 30 minute meal? Perfect for this busy momma!

Then I decided to try spaghetti squash. It usually takes 45 minutes to an hour to cook a spaghetti squash in the oven. It took 15 minutes in the pressure cooker. It took the same amount of time to boil regular spaghetti for the rest of the family.

My most recent experience was with hard boiled eggs. 5 minutes! BOOM!

Needless to say, I kind of felt like I was cheating on my Crockpot, but I know I will be using the pressure cooker all the time. It’s going to make meal prepping so much easier since I can cook things much quicker.

I have never ground my own coffee beans, but I have always wanted to do it. I’m also putting together a little coffee bar on my kitchen counter, so this coffee grinder goes perfectly.

Do I Recommend These Kitchen Gadgets?

So, I know that you can’t buy kitchen items based on witty marketing and pretty colors. However, I totally recommend these products. The knives are sharp and obviously serve their purpose while being aesthetically pleasing. They are stainless steel, BPA free and lead free.

As for the coffee grinder, I had no idea how easy it would be. The sharp blades grind the coffee quickly. It also has little silicone feet so no need to worry about it sliding around. Plus, it only takes seconds to grind the coffee. Easy peasy!

It’s almost Summertime! After a long, long winter, it’s so exciting to see the sun shining and watch the girls run around the yard laughing and playing!

Gymboree has an awesome campaign going on right now and it’s all about families! To be more specific, it’s about families becoming local legends!

How fun is that?

We will probably stay close to home all Summer. It’s easier with littles to do that. Staying in town doesn’t have to be boring though. There are so many adventures to go on.

Summers in the 80s and 90s

I remember, as a kid, that we always stayed home during the summers, with the exception of a summer trip to visit family before my parents divorced. Summers were spent playing outside, wandering around on my parent’s and grandparents’ farms, fishing, and using my imagination. Ipads weren’t a thing, so we had to use our brains (insert gasp) to make our fun!

I grew up on close to 100 acres (between my family farm and my grandparents), so I had so much room for activities. We would go 4 wheeler riding and cave exploring. I even spent my summers learning how to drive a tractor and a truck in the fields.

Times are different now, but I love taking my kiddos to the place where I grew up so they can explore on my old stomping grounds.

How Will We Be Local Legends?

How will we be local legends? There are so many activities to do in our city during the Summer. Our local libraries always have a ton of activities for all ages. Last year, they did a reading competition. We have a zoo and several parks that we can visit. Fingers crossed, the sloths are back at the zoo! I’m really excited for Jurassic Quest. I visited a similar exhibit as a kid in New Orleans on Summer break. It was so much fun! Some other things on our summer bucket list:

  • Semi-pro baseball game
  • Museum (we have a children’s museum that is amazing as well as an art museum)
  • Local volunteering (it’s important for us to create servant hearts in the girls)
  • Vacation Bible School (one of my favorite Summer activities as a kid)
  • Stargazing
  • Water fight
  • Roast marshmallows (maybe I’ll finally have my first ‘smore!)
  • Wash the cars (by hand – gasp)
  • Snow cones
  • Bubbles
  • Miniature Golf
  • Movies on the lawn (at home or the local library)
  • Slipe n Slide
  • Chasing lightning bugs
  • Night time swimming
  • Ice cream dates
  • Swimming (the girls are learning how to swim from their Daddy and big sister!)

Summertime is so sweet for kiddos. Call me frugal, but I love activities that we can do as a family that are free. Some of our favorites are picnics (the twins’ latest obsession), dance parties, picking flowers, chalk drawings on the sidewalk, and playing in the sprinklers! I may even encourage a no screens policy! (Insert another gasp)

I love the idea of going “old school”, putting the electronics away, and just being a kid! I remember being a kid and spending so much time outside exploring our yard and farm and playing until dinner time.

Childlike, Summertime fun is just good for the soul!

Back to Gymboree

Another season means putting away clothes and getting sundresses and bathing suits. These girls are growing like weeds, so a shopping spree is definitely in order for us!  Gymboree is one of our go-to stores when it comes to finding adorable and affordable clothes. They have everything from outside playing clothes, church attire, and 4th of July outfits to shoes and accessories.

Your kids will definitely be the best dressed this Summer. (I’m pretty positive that my girls all dress better than me!)

5 Healthy Tips for Busy Moms

I get it. I totally get it. It’s easy to run through the drive thru. It’s easy to sit and eat chocolate covered almonds (my vice) and watch Netflix. It’s easy to eat your kids leftovers. It’s easy to stay in bed an extra 30 minutes than get up and work out.

I get it.

Whether you work in or out of the house, you are busy.

The tough truth that I have had to face is that you make time for things you want to do. Whatever it is, you will make the time if it’s important to you.

We all have the same 24 hours in a day. No one gets more. And it’s up to YOU how you spend those 24 hours.

Now this post isn’t about time management. Instead I’m going to give you 5 healthy tips that I have learned while being a busy mom!

1) Meal Plan

Before you go to the grocery, make a meal plan and include snacks for the family. (This is something that’s easy to forget until I hear the dreaded “I want a snack!”)

Get fruits and veggies. Hummus. Yogurt. Applesauce. Whatever healthy snacks that you like and have it readily available so you don’t always head for the back of chocolate chips.

By meal planning, you don’t necessarily need to know what you will make on each day, but you need to know what you will be cooking so you can be sure you have all the ingredients. This keeps you from saying, “pick up a pizza. We have nothing to cook.”

Tip: Do an inventory of your kitchen and pantry prior to making your grocery list, so you only get what you need!

2) Meal Prep

Not to be confused with meal planning. Meal prepping is actually prepping the foods. If you are new to meal prepping, start small.

Don’t overwhelm yourself. This is meant to be helpful not stressful.

Depending upon how much work you want to put into it, this could take a half hour or it could take a couple hours. You can clean and cut your fruits and veggies so they are ready to eat or cook. Make overnight oats for breakfasts, so all you have to do is grab and go. Make crockpot chicken for protein throughout the week. Mix up some salads. Your choice. Do as little or as much as you want.

3) Skip the Sodas

You already know they are bad and if you are wanting to make a quick healthy change, this is a great place to start. Instead, drink water. If you want to add taste, infuse with fruit and herbs.

4) Replace Your Coffee Creamer

I don’t know about you, but I used to be one of those coffee drinkers that would drink a little coffee with my creamer. I would always get a caramel macchiato when I went to Starbucks.

Now, I have traded my macchiato for black coffee with some stevia and almond milk. (It’s half the price too!) This does take some getting used to so play around with ingredients.

You can get liquid Stevia like this and it’s great in coffee. You can add pure vanilla extract and unsweetened vanilla almond milk. Try some cinnamon or pumpkin pie spice for a Fall coffee. Adding coconut oil to your coffee and blending it is delicious and makes it super frothy!

If you still want a creamer, just be sure to check the ingredient list and avoid a sugar overload and ingredients like corn syrup (which is sugar too) and all those crazy ingredients that you can’t pronounce. So Delicious makes a great coconut milk creamer. Thrive Market also has some great options like a French Vanilla Dairy Free option and for those who want to get the benefits of collagen with their morning coffee, you can add Collagen Peptides.

5) Get Moving

Get moving! You don’t have to do an hour of Insanity everyday, but do something. Take a walk on your lunch break. Consider taking the stairs instead of the elevator. Get a fitness tracker and track your steps.

Aim for 30 minutes of activity a day. Not only is it good for your body, but it’s good for your mind. Find an activity that you like and if you need to enlist a friend or join a group for accountability. That can be a game changer. Let me know if I can help you with accountability!
