How I Transitioned From Lost Girl to Strong Woman

This year, I will be 35. When I look back at pictures of myself from 10-15 years ago, I barely recognize that girl. I knew nothing about a healthy lifestyle. I went through the wild college stage of too much partying and way too much pizza and Hardee’s.

College wasn’t to blame. My insecurities began way before that.


At 18, I was lost.

My life consisted of a super unhealthy body image and relationship with food. My first weapon of choice was Ephedra pills. Popping so many of those so often that my toes would curl at night because I was so dehydrated. I put myself on weight watchers after I broke my arm Senior year because I was afraid I would get fat. I used more diet pills & laxatives because I was so unhappy with my 119 lb frame.

It took my sister seeing through my lies and BS to get me help before things went too far. I remember being so mad at her and at the same time, so relieved that she cared more about my life and less about my feelings. I needed that. Hiding and lying were exhausting.


At 34, I now know how to FUEL MY BODY and FEED MY MIND. I love this body that has grown 3 beautiful babies. I have learned (and continue to learn) how to live a HEALTHY LIFESTYLE. 

It certainly wasn’t an overnight thing. It took work. I had to retrain my brain to learn what I needed and not what I wanted because too often those are two separate things.

There are 4 fabulous girls that look up to me and I want them to LOVE themselves just how God made them. They need to see my confidence and feel empowered.

My past doesn’t define me and I really want you to know that your past doesn’t define you either.

You can change your story at any time. I did!


I know God’s plan is for me to encourage and empower other women and girls to change their stories and find the lifestyle that you were meant to have.

This has become my mission: encouraging and empowering women to take control of their lives and their health. To be better wives, moms, friends, daughters, we need to begin taking care of ourselves.

I have spent the majority of my life being a cheerleader. I felt a pull to continue that (minus the uniform and pom poms lol). This is my platform to encourage and empower you to love yourself and live a life you’re proud of! When I think of arthritis, I automatically think of my grandparents. They had terrible arthritis. I thought it was an “old person” condition. I’m too young for arthritis.

When I was 18, I broke my arm and had a metal plate put in. I was told that I would probably get arthritis and it would probably happen sooner rather than later. (**eye roll**) There was so much about arthritis that I didn’t understand. It isn’t just a condition that affects old folks.

If you suffer from arthritis then you will understand what a debilitating condition it is. Arthritis can affect your nodules, lumps of tissue under the skin. You may find that this happens over the bonier areas of the body, such as fingers or even elbows.

You may also break out in rashes, and experience bone thinning. This is the result of chronic inflammation, and it can cause you to break bones much more easily than you normally would. Of course, arthritis can affect you at any age, whether you’re in your 20’s, 30’s or 40’s, so it helps to be aware of the signs so you can get it treated as soon as possible.


Chronic inflammation can lead to loss of bone density and you may even find that your joints are much more sensitive than they would normally be. If you want to try and help your own arthritis then one thing that you can do is try and get a lot of exercise.

You also need to make sure that you have a very high calcium diet as well, as this will help you to strengthen your bones. Vitamin D is also great, so get out in the sun as much as possible. If you happen to experience bone loss, then your doctor may be able to prescribe something that can stimulate this. You can also check outDrive medical equipment to see if they can help you.


Some people who suffer from arthritis also experience problems with their eyes. The whites of the eyes inflame and this can lead to scarring. Symptoms of this include blurred vision, redness, pain and more. Your doctor will be able to help you to treat this, but concentration exercises are great and the more you can strengthen your eyes at this point, the better.


Arthritis can affect many different parts of the body, but a lot of people don’t know that it can affect the mouth as well. Inflammation can actually damage the glands in the mouth that help to produce moisture. My Favorite Nutritious Foods For Toddlers

I talk a lot about health and nutrition for women, but today, I want to talk about my favorite nutritious foods for toddlers. We love burgers and fries just like anyone else. It’s called balance, right? Feeding our littles healthy and nutritious food is really important to my husband and I. We want them to know what foods help them stay strong  and healthy, so that when they grow up, they will hopefully continue to make healthy decisions.

Baby M is 8 months old and we are doing baby led weaning with her. (If you want a BLW calendar printable to keep up with what foods you present to your baby, sign up for my free printables library here.) Her favorites so far have been avocado, broccoli, rotisserie chicken and blueberries.

We also did BLW with the twins and they would eat the coolest things like mushrooms, turkey meatballs, roasted sweet potatoes, and banana/egg pancakes. At 3, they still love a lot of healthy foods, but of course they love pizza and ice cream too. (Balance, remember?)

This is such a versatile food. It’s one of those healthy foods that you can sneak into so many other things. I throw it into smoothies and shakes for myself and the kids. My friends over at, shared an awesome recipe for spinach balls (and other hearty and healthy recipes for toddlers). It’s a must try for your littles!

Sweet Potatoes

Sweet potatoes are a staple in our house. I make sweet potato fries that never look Pinterest worthy, but are always delicious. I also love to roast sweet potatoes with coconut oil and paprika. Recently, I made a sweet potato and apple hash that is amazing. Just chop up sweet potatoes and apples (I use granny smith), saute until soft with coconut oil and cinnamon. Top with feta. Thank me later!

Greek Yogurt

The only yogurt I buy is Greek yogurt. I will get the plain and add fruit to it for the girls. Before age 2, it should be full fat Greek yogurt. It’s not uncommon to find one of the girls sneaking the Greek yogurt from the fridge because they love it so much.

Banana Pancakes

This recipe is such a hit with the kiddos! They will eat them warm. They will eat them cold. They will eat them in the house. They will eat them with..well you get the picture.

Strawberry Sorbet

On those days, the girls ask for ice cream and I don’t want them to have it, I make strawberry sorbet. It’s so stinkin’ easy. Simply throw frozen strawberries in the blender with a little honey or pure maple syrup and boom, sorbet.

What made you decide to start your business?

We were living overseas as missionaries, so our budget could be tight at times. I had studied gut health for several years and did loads of gut-helping things, yet still battled with some aspects of health.

When pregnant with my first, I started taking 2 gut-health products my sister recommended. Within 3 days my constipation lifted. Hello!

From there I fell in love with feeling GOOD from the inside out. It seemed a no-brainer to educate people about gut health and grow a business of coaching others to do the same.

Educating others, helping friends, and passionately serving have always been passions of mine!

The best part is I got to grow my business from our grass-roofed hut in Africa, which helped transition my family financially to one of our next dreams.

But seriously, it’s about trade-offs. You won’t be able to work from home and do everything. BUT you will succeed when you prioritize and those priorities take precedence.

Wednesday’s are date nights with my husband. No excuses. Sunday afternoons I plan for our weeks. I schedule my work times and communicate with my family. And quit watching TV!

But quiet time with the Lord and balanced hormones and moods help a LOT!

I walked outside of our new rental to check the mail and stopped short.

I looked up the street…down the street. Walked up the street… walked down the street and concluded that our house was the only one on the street without a mail box!


I felt crazy for texting the landlord, so I had my husband check when he came home. Yup. No mail box?! It reminded me a little too much of the dysfunction we often ran into when living overseas! Oh boy! 

What is that one song that always makes you happy? What’s your jam?

“Girl on Fire”… because my daughter of 3 years belts it so well!

Julia Roberts!! Please let her play me!

Here’s a totally unfair question…If you had to choose between wine or coffee for the rest of your life, which would you choose?

Hmmm…decaf coffee? I don’t love wine or too much caffeine. So, decaf coffee for life!

When I became a mom, I wish someone would have told me….

That I would feel torn between intense production with my work and being with my babies at home.
I love being at home, but I realized it’s outside my comfort zone to slow down and play sometimes.
It pushes me. I get bored and I want to reach for my phone to check notifications.
I want my toddlers to do whatwant to do!
So,I wish someone might have told me that’s okay. And I would feel shame for not wanting to play with my kids every day. That it’s not a big deal. And just keep trying. And to have grace for myself because my kids sure do!

I want my daughter to know…

Her worth doesn’t come from the work that she does. It doesn’t come from perky boobs or how well she does makeup. Or how cute her face is… or how funny she is.

Her worth comes from her identity in Christ.
That’s she’s incredibly clever and smart, funny and cute.
And when she seeks her identity in God, and builds a romance of dance and give and learn, of love and acceptance with the Creator, much light and love will flow from her life. And that’s the type of legacy worth working for.

Describe your perfect day.

Today was as near perfect as it gets. It’s normal and my husband worked, but I love the rhythm of our week. Slept til 5:45… snuck away from the baby in bed. Prayed. Did quiet reading of my Bible on my phone. My kids snuggled me when they woke up and Face-timed my folks while I cooked eggs.

We ate quickly and threw on swimming suits. Drove to the YMCA and made fun memories with those 2 toddlers screaming and crashing around the water.

We ate snacks and blow-dried our hair then bought groceries as Aldi – I love that it makes it in my perfect day because that place is balm for my overseas-living soul! The kids napped. Hallelujah!!! That’s all you need for a good day, right?!

While they napped, I assembled my desk (we just moved) and I worked.

When my husband came home, we finished eating and headed straight out to the sunshine.
I love the ins and outs of our day. A day with two happy kids and a momma who’s thankful is a good day, right?

If you could give 18 year old Nicole one piece of advice, what would it be?

There will come a day when living your dream will be the hardest thing you’ve ever done; where the dream will be worth it, but you will be surprised by how HARD it is.

That doesn’t mean you quit. Just lean into it.

Accept the hard. Reflect. Learn. Know yourself, relieve stress however is healthy for you. And FEED yourself.

Feed the dream. Surround yourself with positive, inspiring folks. The dream will be worth it.

What advice do you have for moms who want to start their own business?

Be prepared to grow because your business will only grow as much as YOU do.

You’re the ceiling. Open yourself up. Read. Listen to podcasts. Study. Don’t expect a lottery ticket. Dig for gold in your backyard because it’s there. Inside of you.

You may need to tear out that head trash or lies you’ve told yourself.

Ditch toxic habits, but you wanted to do that anyway, didn’t you?

Go to counseling. Deal with your ish. Look it bravely in the face. And say, “Yup. I’m doing this. It won’t be easy, but it’ll be worth it.”

What do I think?
