Mac ‘n’ cheese is a weekend favorite. It’s something that we all know how to cook in an emergency. But if you want to take it to the next level, turn it into a taco. Or, more specifically, just add Mexican toppings. Mincemeat, sour cream, jalapenos, and chopped tomatoes all taste great.

We all know that sweet potatoes are extraordinarily good for us, but we don’t eat enough of them. The good news is that you can whip up a meal based on one of these in a matter of minutes. 

Start by baking the sweet potato in the oven at a high temperature until you see sticky, sugary material oozing through the skin. Then open it up and add refried beans, guacamole, and green onions. Delicious.

Are you looking for a hearty meal to get you in the mood for fall? If so, try this chicken cassoulet recipe. It’s decidedly French and uses chicken, sausage, bacon, and cannellini beans for added authenticity.

Mexican Corn Dip

Leave it in the refrigerator overnight for the flavors to infuse and then warm it up slightly as you toast the bread. The result is a memorable, somewhat Italian dish you can whip up in a few minutes.

Hummus Salad Sandwich

Finally, if you want something to take with you, you could make a hummus salad sandwich. Combine the hummus ingredients in a food processor and then spread generously on two slices of bread, placing any other fresh salad you want in the middle. It’s quick and easy health food.
